1 cup whole-wheat flour 1 cup all purpose flour ½ cup oats 2 tablespoons sugar 2 teaspoons baking powder ½ teaspoon baking soda ½ teaspoon salt 1 ½ cups beer (anything but stout) ½ cup cheese ¼ cup scallions (aka green onions)
Preheat oven to 400 degrees.
Grease a bread pan.
Mix beer in with all dry ingredients, just until moistened.
Mix in cheese and scallions.
Bake for 35 to 40 minutes (until a toothpick, inserted to the bottom of the pan, comes out clean).
Let cool for 5 minutes in pan and then transfer to a cooling rack.
Get creative! Try it with different types cheeses and local brews (just remember stout won’t work).
